Ingredients:

For the Salad:

  • 2 cups cooked chicken breast, shredded or diced
  • 4 cups mixed greens (like romaine, spinach, or kale)
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds, toasted
  • 1/2 cup mandarin orange slices (fresh or canned, drained)
  • 1/2 cucumber, thinly sliced
  • 1/4 cup shredded carrots
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)

For the Dressing:

  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:

  • In a large mixing bowl, combine the cooked chicken, mixed greens, cranberries, almonds, mandarin orange slices, cucumber, shredded carrots, and green onions.
  • Toss everything gently to mix the ingredients evenly.

  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and lime juice.
  • Taste and adjust seasoning with salt and pepper.
