Bacon Cheeseburger Meatloaf

Ingredients:

  • 1 lb ground beef
  • 1/2 lb bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional: pickle slices for serving

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, crumbled bacon, shredded cheddar, breadcrumbs, milk, egg, chopped onion, ketchup, mustard, Worcestershire sauce, salt, and pepper until well combined.
  3. Shape the mixture into a loaf shape and place it in a loaf pan or on a baking sheet.
  4. Spread a thin layer of ketchup on top of the meatloaf.
  5. Bake for 50-60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  6. Let it rest for 10 minutes before slicing.

Optional:

Serve with pickles on the side to complete the cheeseburger vibe. You can also top it with extra bacon or cheese during the last few minutes of baking for extra indulgence!
