Cheesy Mashed Potato Puffs
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 2 large eggs
- ¼ cup sour cream
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- ½ teaspoon garlic powder (optional)
- Salt and pepper to taste
- Butter or non-stick spray (for greasing the muffin tin)
Instructions:
- Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or non-stick spray.
- Mix the ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, sour cream, Parmesan cheese, chives, garlic powder (if using), salt, and pepper. Stir until everything is well mixed.
- Spoon the mixture into the prepared muffin tin, filling each cup to about ¾ full. Smooth the tops with a spoon.
- Bake for 25-30 minutes or until the tops are golden brown and the puffs are firm.
- Cool slightly before removing from the tin. Serve warm, garnished with extra chives if desired.
