Cheesy Mashed Potato Puffs

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 large eggs
  • ¼ cup sour cream
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • ½ teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • Butter or non-stick spray (for greasing the muffin tin)

Instructions:

  1. Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or non-stick spray.
  2. Mix the ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, sour cream, Parmesan cheese, chives, garlic powder (if using), salt, and pepper. Stir until everything is well mixed.
  3. Spoon the mixture into the prepared muffin tin, filling each cup to about ¾ full. Smooth the tops with a spoon.
  4. Bake for 25-30 minutes or until the tops are golden brown and the puffs are firm.
  5. Cool slightly before removing from the tin. Serve warm, garnished with extra chives if desired.
