Lazy Girl Pecan Pie Bars
Ingredients:
For the Crust:
- 1 cup butter (2 sticks), melted
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 tsp salt
For the Filling:
- 3 large eggs
- 1 cup light corn syrup
- 1 cup light brown sugar, packed
- 1 tsp vanilla extract
- 1 1/2 cups pecans, chopped
Instructions:
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal later.
Step 2: Make the Crust
- In a mixing bowl, combine the melted butter, flour, powdered sugar, and salt until it forms a soft dough.
- Press the dough evenly into the bottom of your prepared baking dish.
- Bake for about 15–20 minutes, or until the edges are lightly golden brown.
Step 3: Make the Pecan Filling
- In another bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract until smooth.
- Fold in the chopped pecans.
Step 4: Bake the Bars
- Pour the pecan mixture over the pre-baked crust.
- Return the dish to the oven and bake for an additional 30–35 minutes, or until the filling is set and golden.
Step 5: Cool and Serve
- Let the bars cool completely before lifting them out using the parchment paper.
- Cut into squares and enjoy!
Tip:
If you're in an extra lazy mood, you can even use a store-bought pie crust instead of making the shortbread base!
