Lazy Girl Pecan Pie Bars

Ingredients:

For the Crust:

  • 1 cup butter (2 sticks), melted
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 tsp salt

For the Filling:

  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup light brown sugar, packed
  • 1 tsp vanilla extract
  • 1 1/2 cups pecans, chopped

Instructions:

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Step 2: Make the Crust

  • In a mixing bowl, combine the melted butter, flour, powdered sugar, and salt until it forms a soft dough.
  • Press the dough evenly into the bottom of your prepared baking dish.
  • Bake for about 15–20 minutes, or until the edges are lightly golden brown.

Step 3: Make the Pecan Filling

  • In another bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract until smooth.
  • Fold in the chopped pecans.

Step 4: Bake the Bars

  • Pour the pecan mixture over the pre-baked crust.
  • Return the dish to the oven and bake for an additional 30–35 minutes, or until the filling is set and golden.

Step 5: Cool and Serve

  • Let the bars cool completely before lifting them out using the parchment paper.
  • Cut into squares and enjoy!

Tip:

If you're in an extra lazy mood, you can even use a store-bought pie crust instead of making the shortbread base!
