Mango Key Lime Cheesecake

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (450g) cream cheese, softened
  • 1/2 cup granulated sugar
  • Zest of 2 key limes (or regular limes)
  • 1/4 cup key lime juice (or regular lime juice)
  • 1 tsp vanilla extract
  • 3 large eggs

For the Mango Topping:

  • 2 ripe mangoes, peeled and pureed (about 1 1/2 cups mango puree)
  • 1/4 cup sugar
  • 1 tbsp lime juice
  • 1 tsp cornstarch (optional, for thickening)

For Garnish (optional):

  • Fresh mango slices
  • Lime zest
  • Whipped cream

Instructions:

Prepare the Crust:

  • Preheat the oven to 350°F (175°C).
  • Combine the graham cracker crumbs, sugar, and melted butter in a bowl. Mix until evenly coated.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Bake for 8-10 minutes. Remove from the oven and let it cool completely.

Make the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add the lime zest, key lime juice, and vanilla extract, and mix until combined.
  • Add the eggs one at a time, beating well after each addition.
  • Pour the filling over the cooled crust, smoothing the top with a spatula.

Bake the Cheesecake:

  • Reduce the oven temperature to 325°F (160°C).
  • Bake the cheesecake for about 50-60 minutes, or until the center is set but still slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  • Afterward, refrigerate the cheesecake for at least 4 hours, or overnight, to fully set.

Prepare the Mango Topping:

  • In a saucepan, combine the mango puree, sugar, and lime juice. Heat over medium heat until it starts to simmer.
  • If the mixture is too runny, stir in the cornstarch and continue cooking until it thickens.
  • Let the topping cool before spreading it over the chilled cheesecake.

Garnish and Serve:

  • Once the cheesecake has set, spread the mango topping evenly over the top.
  • Garnish with fresh mango slices, lime zest, and whipped cream if desired.
  • Slice and serve chilled!
