Mini Cinnamon Swirl Cheesecakes
Ingredients:
Crust:- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ¼ cup sour cream
- ¼ cup heavy cream
- ¼ cup light brown sugar, packed
- ½ teaspoon ground cinnamon
- 1 tablespoon unsalted butter, melted
Glaze:
- ½ cup powdered sugar
- 2-3 teaspoons milk
Directions:
- Preheat Oven:
- Make the Crust:
Press about 1 tablespoon of the mixture into the bottom of each cupcake liner.
Bake for 5 minutes, then set aside to cool.
- Prepare the Cheesecake Filling:
- Assemble the Cheesecakes:
- Make the Cinnamon Swirl:
Drop small dollops of the cinnamon mixture onto the cheesecake batter and swirl gently with a toothpick.
- Bake:
Remove from the oven and let them cool completely in the pan.
Once cooled, refrigerate for at least 2 hours to chill.
- Prepare the Glaze:
Drizzle the glaze over the chilled cheesecakes before serving.
